Indian-style lentil curry (dal):
Ingredients:
1 cup red lentils
1 onion, chopped
2 garlic cloves
1 carrot, cut into pieces
1 tsp turmeric
1 tsp curry powder
1 can of coconut milk (400ml)
500ml vegetable broth
Salt, pepper to taste
Fresh coriander or parsley for serving
Preparation:
Heat a little oil in a pot, fry the onion and garlic until golden.
Add carrot and spices, sauté slightly.
Add lentils, coconut milk and broth.
Cook over medium heat for 15 minutes until the lentils are soft.
Serve with rice or naan bread, sprinkled with fresh herbs.
