Recipe suggestion: Spring rolls
Ingredients:
1 packet of rice paper
50 g glass noodles (soaked for 20 minutes, drained and cut into 4 cm long pieces)
4 dried Chinese mushrooms (soak for 20 minutes, drain, remove stems and finely chop caps)
1 tbsp coriander leaves and stems, finely chopped
1/2 tsp garlic, finely chopped
50 g bamboo shoots, finely chopped (optional)
1 large spring onion, finely chopped
1 small carrot, grated
1 white cabbage leaf, finely chopped
100 g bean sprouts, finely chopped
125 g minced pork or beef
4 tsp fish sauce
Vegetable oil for frying
Preparation:
Briefly soak the rice paper in cold water and spread it out on a damp kitchen towel.
Mix the mushrooms and glass noodles with the finely chopped vegetables and meat, add the fish sauce and garlic, mix well.
Place the filling in the middle of the paper, fold the edges and roll up carefully.
Heat oil in a frying pan or wok. Place 3-4 rolls in the hot oil and fry until golden brown.
Drain on a paper towel or strainer.
Serve on a plate, garnished with coriander or parsley. Goes great with sweet chili sauce.
