There is an easy way to tell the difference between high-quality cocoa. Rub cocoa powder between your fingers. If it doesn't completely fall off, leaving a brown, greasy residue on your fingers, then it is high-grade cocoa.
If cocoa is not alkalized, it means that it has not been subjected to a chemical process to improve color and flavor, which reduces the beneficial effects of the product on the body. Alkalized powder is cheaper, but more suitable for confectionery products. On the other hand, non-alkalized cocoa provides many health benefits. For example, it improves antioxidant levels in the blood, normalizes blood pressure and heart rate, relieves painful coughs, prevents tooth decay and, of course, creates a good mood.
