Ingredients (for 2 servings):
200 g rice noodles
1 tablespoon vegetable oil
1 carrot (cut into thin strips)
1 bell pepper
1 handful of broccoli or other seasonal vegetables
2 garlic cloves (chopped)
2 tablespoons King Lobster fish sauce
1 teaspoon sugar
1 teaspoon lime juice or rice vinegar
Fresh coriander or scallions (optional)
Chili flakes or fresh chili (to taste)
Preparation:
Cook or blanch the rice noodles as directed on the package, then rinse with cold water.
Heat the oil in a frying pan or wok. Add the garlic, then the carrots, peppers and other vegetables. Fry for 3-4 minutes.
Add noodles, fish sauce, sugar, and lime juice. Stir until well combined and heated through.
Serve hot, sprinkled with fresh herbs and chili if you want a spicier version.
