Shirataki udon noodles – a light alternative to classic noodles
Shirataki udon noodles , also known as "angel hair", are unique, ultra-light noodles made from the konjac plant (konjac root) . They have been a favorite in Asian cuisine for centuries and have become popular around the world as a healthy alternative to traditional noodles.
Shirataki noodles are very low in calories and carbohydrates , so they are ideal for:

RECIPE
🍜 Shirataki noodle wok with vegetables and tofu (vegan & low carb)
Ingredients (for 2 servings):
1 package of shirataki udon noodles
1 tablespoon sesame or coconut oil
1 carrot (cut into strips)
½ bell pepper
1 handful of spinach or kale
100 g tofu (cubed)
2 garlic cloves (chopped)
2 tablespoons soy sauce
1 teaspoon rice vinegar or lime juice
Optional: chili flakes, sesame seeds, scallions
Preparation:
Rinse the shirataki noodles in cold water, then fry in a dry pan for ~2 minutes to evaporate excess liquid and improve the texture. Set aside.
Heat the oil in a pan or wok. Fry the tofu until golden brown.
Add chopped garlic, carrot, bell pepper and spinach. Fry for 3-4 minutes.
Add the shirataki noodles, soy sauce, and vinegar. Stir for another 1-2 minutes to heat through and blend the flavors.
Serve with toasted sesame seeds, scallions, or chili flakes, as desired.
