Simple recipe:
Vegetable curry with Pasco garlic and ginger puree
Ingredients:
2 tbsp Pasco garlic and ginger puree
1 onion, diced
2 tomatoes, cut into pieces
2 carrots, sliced
1 zucchini or courgette, cut into pieces
1 tsp curry powder
1 can of coconut milk (400ml)
2 tbsp oil
Salt and pepper to taste
Fresh coriander for serving
Preparation:
Heat the oil in a pot, add the Pasco garlic and ginger puree, and fry for 1–2 minutes.
Add onions, then tomatoes and curry powder, fry until fragrant.
Stir in carrots and zucchini, add coconut milk.
Simmer for 15–20 minutes until the vegetables are tender and the sauce has thickened.
Serve with rice or naan bread, sprinkled with coriander
