Simple kimchi recipe with LOBO kimchi seasoning paste
Ingredients:
1 medium head of Chinese cabbage (about 1 kg)
3–4 tablespoons LOBO kimchi seasoning paste
2 tablespoons salt
1 teaspoon sugar (optional)
2–3 chopped garlic cloves
1 teaspoon grated ginger (optional)
2 finely chopped green onions
1 carrot, cut into thin strips (optional)
Preparation:
Cut the cabbage into 2-3 cm wide slices and sprinkle with salt. Leave to stand for 1-2 hours to soften the cabbage, stirring occasionally.
Rinse the cabbage in cold water and dry well.
Mix the kimchi paste with garlic, ginger, sugar and green onions.
Stir this mixture into the cabbage along with the carrot.
Place the mixture in an airtight container or jar and let it ferment at room temperature for 1–3 days (depending on the desired level of acidity).
Then store the kimchi in the refrigerator - it will continue to ferment, but much more slowly.
