Recipe idea – Thai red curry with chicken:
Ingredients:
2 tablespoons Thai Dancer red curry paste
400 ml coconut milk
300 g chicken fillet, cut into pieces
1 bell pepper, cut into strips
1 small eggplant, cut into pieces
100 g mushrooms, sliced
2 garlic cloves, finely chopped
1 tablespoon of oil
Fresh basil or coriander for garnish
Salt and sugar to taste
Preparation:
Heat the oil in a pan, add the garlic and red curry paste, fry until the aroma begins to release.
Add the chicken pieces and fry until lightly browned.
Pour in the coconut milk, stir and let simmer for 10 minutes.
Add the peppers, eggplant and mushrooms, continue cooking for another 5-7 minutes until the vegetables are soft.
Add salt and sugar to taste, scatter with fresh basil or coriander and serve with steamed rice.
