Saffron is the most expensive spice in the world. Its fine threads are obtained from the stigmas of the saffron crocus flower, and are hand-picked. The highest quality saffron is in threads, not powder.
For saffron strands to reveal all their magic, they should be soaked in warm milk or roasted for a few seconds in a dry pan, and then ground into a powder and added to food.
A small pinch of saffron will add a pleasant, delicate aroma and rich yellow color to spicy light sauces, broths, rice and cereal dishes, as well as lamb, chicken and fish dishes.
