Ingredients:
200 g rice noodles
150 g shrimp (or chicken of your choice)
100 g tofu, cut into cubes
2 eggs
2 tablespoons Lobo Pad Thai Paste
2 tablespoons oil for frying
3 tablespoons peanuts, chopped
1 cup mung bean sprouts
Fresh coriander and lime slices for serving
Preparation:
Soak the noodles in warm water for about 10 minutes, then drain.
Heat the oil in a pan and fry the prawns and tofu until golden. Remove from the pan.
In the same pan, add the eggs and quickly bring to a boil.
Add the noodles, Lobo Pad Thai Paste and stir-fry everything together until the noodles are soft and the sauce is well mixed with the other ingredients.
Return shrimp and tofu to the pan, stir gently.
Serve with chopped peanuts, mung bean sprouts, fresh coriander and lime slices.
