RECIPE

🍲 Lentil stew with mountain mint

A warming, aromatic, and hearty dish, with mountain mint adding a special depth and refreshing note.

Ingredients (for 4 servings):

  • 1 cup green or brown lentils (rinsed)

  • 1 onion (chopped)

  • 2 garlic cloves (chopped)

  • 1 carrot (cut into pieces)

  • 1 tsp dried mountain mint

  • ½ tsp cumin or caraway seeds

  • ½ tsp ground pepper

  • 1 tbsp olive oil

  • 800 ml vegetable broth or water

  • Salt to taste

  • Optional: lemon juice or fresh parsley for serving

Preparation:

Heat the oil in a pot and fry the onions until they become translucent.

Add garlic, carrots and cumin, stir and sauté for a few minutes.

Stir in the lentils, add the broth, and cook over medium heat for about 25–30 minutes, until the lentils are soft.

Add salt, pepper, and spearmint – let the seasoning infuse for a few minutes, then remove from heat.

Serve hot, sprinkled with parsley or a little lemon juice if desired.
