🍗 Recipe idea: Classic smoked chicken with juniper berry flavor

Ingredients:

  • 1 whole chicken (about 1.5-2 kg)

  • 2–3 tbsp. spice mix "For smoking chicken"

  • 1 tbsp. salt (or to taste)

  • 1 tbsp. brown sugar (optional – for flavor balance)

  • 1 tbsp. oil

  • Optional: fresh thyme or rosemary in a pinch

Preparation:

  • Prepare the chicken – wash, dry, and remove any excess fat or feathers.

  • Make a spice paste: mix the spice mixture with salt, sugar and oil.
    Add a little lemon juice or garlic if desired.

  • Rub the chicken with the mixture both inside and out.
    If you want a more pronounced flavor, also put the spice under the skin (for example, on the breast).

  • Leave to marinate in the refrigerator for at least 4–6 hours (even better – overnight).

  • Smoke at 80–100°C for approximately 2.5–3 hours, until the internal temperature of the chicken reaches 75°C.

  • Rest for 10–15 minutes before slicing to retain the juices.

💡 Tip:

  • When smoking, use juniper twigs or wood chips for a more intense smoky note.

  • The mixture will also be great for smoked chicken fillets or ham .
