RECIPE
🍲 Creamy Indian-style vegetable curry with oriental spices
Ingredients (for 4 servings):
2 tbsp oriental spice mix
1 onion (chopped)
2 garlic cloves (chopped)
1 tsp fresh grated ginger
1 carrot (sliced)
1 zucchini or bell pepper (cut into pieces)
1 can (400 ml) coconut milk
1 can of cooked chickpeas (or lentils)
2 tbsp tomato puree
Salt and chili to taste
Fresh parsley or coriander for serving
Oil for frying
Preparation :
Heat the oil in a saucepan and fry the onions until translucent.
Add garlic, ginger and oriental spice blend . Stir for 1-2 minutes until the flavors bloom.
Add carrots, tomato puree, then the other vegetables and chickpeas.
Add coconut milk, bring to a boil, reduce heat and simmer for ~15 minutes, until vegetables are tender and sauce has thickened.
Taste, add salt or chili as desired.
Serve with basmati rice or naan bread.
