Our own blended mixture , created specifically for game meat dishes – venison, roe deer, wild boar and other hearty, aromatic dishes.
The recipe for the mixture comes from our opja – a hunter and flavor experimenter , who spent years perfecting the proportions of spices until he found the right one – a balanced, deep, and forest-like flavor.
Ideal for:
🦌 for marinating deer, roe deer and other game meat
🍲 for stews and game soups
🔥 for smoking or grilling meat
🐓 also for chicken or beef, if you want to give it a "forest flavor"
Ingredients and their taste nuances:
Onions and garlic – add sweet spiciness and warmth, enriching the depth of flavor
Salt – emphasizes the natural flavor of the meat and unites all the spices
Allspice and black pepper – adds a warm, gentle spiciness and enhances the aroma
Mustard and dill seeds – provide a nutty, mildly spicy note and balance
Rosemary – brings a slightly resinous, coniferous aroma that goes great with wild meat
Cloves and coriander – enrich the mixture with a warm, sweet exotic nuance
Juniper berries – a characteristic accent of game flavor, gives a soft resinous and earthy note
Cumin – adds an earthy flavor, traditionally used in hearty Latvian dishes
Bay leaves – bring a classic base tone that rounds out the flavors and makes the mixture complete
Usage:
Rub the meat with oil and Hubert's spice blend , leave to marinate overnight, and bake, braise, or smoke the next day.
The flavor will be deep, wild, and authentic – just like game food should be.
