Recipe idea: Yellow curry with chicken and potatoes
Ingredients:
2 tbsp Thai Dancer yellow curry paste
400 ml coconut milk
300 g chicken fillet, cut into pieces
2 potatoes, peeled and diced
1 carrot, sliced
1 onion, sliced
1 tbsp fish sauce (or soy sauce for a vegetarian version)
1 tsp sugar
Oil for frying
Fresh coriander and lime slices for serving
Served with: Jasmine rice
Preparation:
Heat a little oil in a saucepan or deep frying pan. Add the yellow curry paste and fry for 1-2 minutes until fragrant.
Add half the coconut milk (200 ml) and cook, stirring, until the paste is completely dissolved and a smooth sauce forms.
Add the chicken pieces and fry until they turn white on all sides.
Add the remaining coconut milk, potatoes, carrots and onion. Reduce heat and simmer for about 15-20 minutes, until the vegetables are tender and the chicken is cooked through.
Add fish sauce and sugar, stir. If necessary, add a little water or coconut milk to achieve the desired consistency.
Serve with hot rice, sprinkle with fresh coriander and serve with a slice of lime.
Tip: Yellow curry is the mildest of the traditional Thai curries – perfect for children or those who prefer less spicy dishes.
