Dong ding is one of the most popular Taiwanese oolong teas. It is a tea that retains the mild flavor of high-altitude oolong, as well as the rich, sweet notes from oxidation and drying. It is well-balanced, and is a great tea to enjoy throughout the day.
This tea takes its name from the mountain it comes from, Dong Ding Shan (Dong Ding Mountain). Dong Ding translates to “frozen peak” or “icy peak.”
Oolong tea is made from the Camellia sinensis plant. Its dried leaves and leaf buds are used to make several different types of tea, including black and green tea. Oolong tea is fermented for a longer period than green tea, but less than black tea. It contains caffeine, which affects thinking and alertness.
Add one teaspoon of Dong Ding Oolong to the teapot, pour boiling water over it and leave to steep for 3-5 minutes.
This tea can be re-infused several times until the leaves are fully expanded. Be sure to take the time to observe the color of the tea leaves and enjoy the aroma of the tea.
