Dried lemongrass stalks give a citrus-like aroma and are widely used in Thai cuisine. Lemongrass is also used in tea and even cocktails. Dried lemongrass is added during cooking when a liquid is applied to the pan or pot to moisten the lemongrass and allow it to release the flavor. Usually pieces of lemongrass are removed before eating.
