RECIPE:
🌶️ Spicy chili sin carne (vegan version)
Ingredients (for 4 servings):
1 tbsp vegetable oil
1 large onion (chopped)
2 garlic cloves (chopped)
1 carrot (grated or finely chopped)
1 tsp chili powder (adjust to desired spiciness)
1 tsp smoked paprika
1 tsp ground cumin
1 tsp salt
1 can of canned tomatoes (400g)
1 can red beans (rinsed)
1 can of black beans or chickpeas
100 ml water or vegetable broth
Optional: a pinch of sugar, lime juice or fresh coriander
Preparation:
Heat the oil in a pot, add the onions and carrots. Fry for 5–7 minutes until soft.
Add the garlic, chili powder, smoked paprika, cumin, and salt. Stir and sauté for another minute until the flavors begin to blend.
Add tomatoes, beans and water/broth. Bring to a boil.
Reduce heat and simmer for 20–25 minutes, stirring occasionally.
Taste – add more chili powder, salt, or sugar if necessary.
Serve with rice, tortillas or fresh bread. Garnish with cilantro or vegan sour cream.
