SUMAK spice comes from a small flowering tree native to Iran. When the berries are ripe, they are sun-dried and ground. Sumac has a salty, lemony flavor, with a tart aftertaste reminiscent of sour cherries.
It is often used in recipes as a substitute for lemon.
The spice is especially popular in Turkish and Georgian cuisine - used in hummus, sprinkled on rice, meat, and salads.
