Preparation:
Put the soba noodles in boiling water and cook for 4–6 minutes.
Rinse under cold water to stop the cooking process and preserve the texture of the noodles.
Add to your favorite dishes or sauces.

Ingredients (for 2 servings):
150 g soba noodles
2 tablespoons soy sauce
1 tablespoon sesame oil
1 teaspoon rice vinegar (or lime juice)
1 teaspoon honey or maple syrup
1 teaspoon grated ginger
1 teaspoon toasted sesame seeds
Finely chopped scallions or coriander
Optional: boiled chicken, tofu or avocado
Preparation:
Bring water to a boil, boil noodles for 4-6 minutes, then rinse under cold water and drain.
Mix the sauce ingredients – soy sauce, sesame oil, rice vinegar, honey and ginger.
Mix the noodles with the sauce and sprinkle with sesame seeds and fresh herbs.
Serve as a light lunch or refreshing dinner dish. Can be topped with protein of your choice.
