Bell peppers can be made from several different varieties of the chili pepper family, Capsicum annuum, so the American Spice Trade Association, or ASTA, came up with a scale to measure the color of bell peppers. ASTA scores range from 50 to 180; 85 is the standard color grade for bell pepper spice that you'll typically find in supermarkets. As the numbers go up, the color of the bell pepper becomes more saturated and vibrant.
Our peppers are especially bright, rich in color. They have an ASTA 120 value, which is not so easy to find elsewhere on the Latvian market. If you want to add brightness to your dish, you will need less of our ASTA 120 peppers than those sold in the supermarket.
