🍲 Recipe: Simple chicken tagine with vegetables (serves 4)
Ingredients:
4 chicken thighs or drumsticks
2 carrots
2 potatoes
1 zucchini
1 onion
2 garlic cloves
2 tbsp olive oil
2 tsp Marrakesh spice blend
1 tsp salt
200 ml water or broth
Optional: raisins or dried apricots for sweetness
Fresh coriander for serving
Preparation:
Cut the onion, garlic and vegetables into small pieces.
Heat the oil in a pot or pan with a lid, fry the onion and garlic until golden.
Add chicken pieces, fry on both sides.
Add the Marrakesh spice mix, salt and water. Stir.
Add the vegetables (and desired fruit), cover, and simmer over low heat for 40–45 minutes, until the chicken is cooked and tender.
Serve with couscous or rice, sprinkled with fresh coriander.
