🥥 Recipe: Thai Tom Kha Gai Coconut Soup
Ingredients:
400 ml Chaokoh coconut milk
300 ml chicken broth
300 g chicken fillet, cut into strips
2-3 slices galangal (or ginger)
2 stalks lemongrass, crushed
3 kaffir lime leaves (optional)
150 g champignons
1 chili pepper (optional)
2 tbsp fish sauce (or soy sauce for a vegetarian version)
1 tbsp lime juice
Fresh coriander for serving
Preparation:
Pour coconut milk and broth into a pot, add lemongrass, galangal and kaffir lime leaves.
Bring to a boil, then add the chicken strips and cook for about 5–7 minutes, until the meat is cooked through.
Add sliced mushrooms, chili, fish sauce and cook for another 3–5 minutes.
Remove from heat, add lime juice.
Serve with fresh coriander and, if desired, an extra slice of lime.
Storage:
After opening, store in the refrigerator and use within 2–3 days.
