Juniper berries are a traditional ingredient in European cuisine , especially when marinating wild boar, deer, and pork . They give the meat a distinctive aroma, a mild bitterness, and a woodsy note. In Native American cuisine , juniper berries are used in marinades for buffalo meat , giving it a special spicy touch.
Juniper berries can also be used in everyday dishes – adding them to stews, soups, sauces and vegetable dishes. They are also popular in the preparation of alcohol , for example, for flavoring gin, liqueurs and infusions.
Usage:
Meat marinades: 1–2 teaspoons of dried juniper berries per 500 g of meat. When preparing spices, they can be slightly crushed or added whole;
Stews and soups: add 2–3 berries per 1–2 liters of liquid, allowing to simmer with the food;
Drinks and infusions: 4–6 berries per 1 liter of alcohol or water for flavoring, leaving to infuse for at least 7–10 days.
RECIPE
Juniper berry marinated pork
Ingredients:
1 kg pork fillet
1 teaspoon dried juniper berries
3 garlic cloves, chopped
2 tablespoons olive oil
1 tablespoon soy sauce
1 teaspoon brown sugar
Salt and pepper to taste
Preparation:
Chop the juniper berries and mix with garlic, olive oil, soy sauce, sugar, salt and pepper.
Marinate the pork for at least 2–3 hours or overnight in the refrigerator.
Bake in the oven at 180°C for about 25–30 minutes until the meat is done.
Serve with vegetable side dishes or potatoes.
Juniper berries give dishes a forest aroma, a slight bitterness, and a spicy note , which makes them especially aromatic and unforgettable.
