Ingredients:
2 tablespoons ground fenugreek seeds
2 tablespoons coriander seeds
1 tablespoon cumin seeds
1 tablespoon turmeric powder
1 teaspoon ginger powder
1 teaspoon chili powder (to taste)
½ teaspoon black pepper
½ teaspoon cardamom seeds
Preparation:
Lightly toast whole seeds (fenugreek, coriander, cumin, cardamom) in a dry pan until they start to release their aroma.
Grind in a coffee grinder or mortar until powdery.
Mix with the other spices (turmeric, ginger, chili, pepper).
Store in an airtight jar.
Use: Add this mixture to meat, vegetable or lentil curries for a true Indian taste and rich aroma.
