Garam masala is a mixture of spices widely used in Indian cuisine. It is added to dishes as a mixture, but can also be mixed with other spices. Before adding to food, Garam masala spices are usually toasted, thus highlighting more flavor and aroma. The word masala means “spices” and spirit means “hot.” Thus, the term Garam masala literally means “hot spices”.
In fact, there is no single recipe for Spirit masala. The ingredients vary depending on the region as well as the individual preferences of the chef. In all variations you will definitely find such spices as coriander, cumin, cardamom, cloves, black pepper, cinnamon and nutmeg. Spices such as turmeric, saffron, fennel seeds , ginger, garlic, mustard seeds, allspice, star anise, tamarind and bay leaves may also be added . In northern India, Garam masala is usually used in powder form, while in the south of the country, a paste is made with coconut milk, vinegar or water. The closer to the equator, the spicier the mixture will be.
The spirit of masala can also be called as a set of spices for different tastes. Therefore, we recommend everyone to find the most suitable combination of spices, taking into account both the nuances of taste and sharpness.
