Ideal for curries, stews, vegetable dishes and lentils. Add at the end of cooking to preserve flavours and give the dish a special character.

Simple vegetable curry with Garam masala
Ingredients:
1 tablespoon of oil
1 onion (chopped)
2 garlic cloves (chopped)
1 teaspoon grated ginger
2 teaspoons Garam masala spice mix
400 g canned tomatoes (diced)
1 carrot (sliced)
1 potato (diced)
200 g cauliflower
200 ml coconut milk
Fresh coriander for serving (optional)
salt to taste
Preparation:
Heat the oil in a pan and fry the onion until it becomes transparent.
Add garlic, ginger, turmeric and Garam masala. Fry for a few seconds until the spices start to smell fragrant.
Stir in the tomatoes, carrots, potatoes, and cauliflower. Add salt.
Add coconut milk and simmer for ~20 minutes until the vegetables are soft.
Serve with rice or naan bread. Garnish with fresh coriander.
