Our lemon peels, produced in Spain, are industrially dehydrated and retain their natural aroma. They contain both the yellow peel and the white parts, and in rare cases, the seeds, which can be easily removed before use. The peels are a natural brown color - they are not bleached with sulfur compounds, so they retain their clean, natural appearance and aroma.
Culinary and home use:
Alcohol flavoring – ideal for drinks like gin or limoncello.
Spice mixes and sauces – ground to add to various sauces and dishes, for example, blueberry muffins.
In baking – gives a citrusy aroma; use as lemon water in cakes and cookies, as this is how the zest releases its flavor and essential oils better.
DIY salad oils – add ground zest to olive oil for a delicious, citrusy salad dressing.
Tips for use:
Soak in warm water before use to soften the peels.
Ground lemon zest can be a little more bitter than lemon juice in cakes, so finding the right ratio with sugar helps preserve the delicate lemon flavor.
The citrus scent comes out best when the peels are mixed with fats – oil or butter.
