Agar-agar – a natural thickener and gelatin substitute from seaweed
Agar-agar is a tasteless, white powdery thickener derived from red seaweed . It is a plant-based alternative to gelatin , ideal for vegans , vegetarians and people with gluten intolerance .
Unlike animal-based gelatin, agar-agar sets more firmly , is heat-resistant , and maintains its structure even in warmer desserts or preserves. It is great for making both sweet and savory dishes, from jellies and marmalades to vegetable aspics.
In addition, agar-agar is not only practical, but also nutritious – it contains calcium, iron, fiber, and manganese , and contains almost no calories or fat.
📌 How to use agar-agar?
To ensure proper thickening, follow these steps:
Dissolve 1 teaspoon of agar-agar powder in 4 tablespoons of warm water .
Heat the mixture to boiling point .
Cook over low heat for about 5 minutes , stirring constantly.
The hot agar-agar solution is added to pre-warmed ingredients (e.g. juice, milk, puree, etc.).
Pour into molds and refrigerate until solidified .
📌 Important: agar-agar only activates in heat - it does not harden if not boiled.

🍓 Recipe idea: Light berry jelly with agar-agar (vegan)
📝 Required:
400 ml berry juice or puree (e.g. strawberry, raspberry or blackcurrant)
1–2 tbsp sugar (to taste)
1 tsp agar-agar powder
👩🍳 Preparation:
In a saucepan, mix the juice with sugar and agar-agar.
Bring the mixture to a boil, stirring constantly. Once it starts to boil, let it simmer for another 1-2 minutes to completely dissolve the agar-agar.
Remove from heat and pour into bowls or silicone molds.
Allow the jelly to cool to room temperature, then refrigerate for 1–2 hours until firm.
