800 ml chicken or vegetable broth
1 tablespoon soy sauce
1 teaspoon sesame oil
2 boiled eggs (cut in half)
1 cup spinach or kale
1/2 cup cooked corn kernels
Onions, chili flakes, sesame seeds for decoration
Preparation:
Prepare the noodles as directed above.
Heat the broth in a saucepan, add soy sauce and sesame oil.
Add spinach and corn, cook for 1–2 minutes.
Place the noodles in a bowl, pour over the hot broth, add the eggs and garnish with fresh scallions and sesame seeds.
